I made this Coconut Rice tonight and it's TO DIE FOR! No one even suspected that I had snuck in coconut milk. While the Silk Soy/Coconut milk is higher in fat (6 grams a serving) than I prefer, it is healthier than other coconut juices out there!! Check this out & I MUST share!!
1 tablespoon coconut oil
1 cup jasmine rice
1 ½ cups Silk Pure Coconut Original coconut milk
½ teaspoon salt
Toasted coconut flakes, to serve
Heat oil in a medium saucepan over medium heat. Add rice and cook for 2 minutes. Add coconut milk and salt and bring to a boil. Stir, reduce heat to a simmer and cover. Cook for 20 minutes. Remove from heat and let sit for 10 minutes. Fluff with a fork, garnish with toasted coconut and serve.
